Ingredients

  • 1 piece of ginger, about one thumb-width across (peeled and thinly sliced into strips)
  • 1½ teaspoons salt
  • 2½ viss pork ribs (cut into 2-inch pieces)
  • 3 tablespoons finely sliced shallots
  • 2 tablespoons finely sliced garlic

  • 4 tomatoes (cut into medium-sized pieces)
  • 9½ tablespoons apple cider vinegar
  • 4 tablespoons and 1 teaspoon honey
  • 3 tablespoons fish sauce
  • 1 tablespoon oyster sauce
  • Cooking oil
  • 8 tablespoons water
  • Ground black pepper

Step-by-step instructions

1. Fill a pot with water and bring it to a boil. Once it's boiling, add the ginger and 1 teaspoon of salt. Add the pork ribs, cover the pot, and let it boil for a few minutes.

Once it has boiled, rinse the pork ribs with cold water.

2. Heat a pan and add oil. Once the oil is hot, add the pork ribs and fry until they turn a light brown color. Then transfer them to a plate.

If there's a lot of oil left in the pan, pour some out. It's enough to leave just a thin coating of oil in the pan.

3. Add the shallots and garlic to the pan again and sauté until fragrant. Then add the tomatoes and stir-fry for about 1 minute.

4. Once the tomatoes release their juices, add the vinegar, honey, fish sauce, oyster sauce, and half a teaspoon of salt, and bring to a boil.

5. Then add the pork ribs. Sprinkle in the ground black pepper. Stir the pork ribs and sauce together evenly, and let it simmer until the sauce thickens. You'll need to stir it every 5 minutes.

Once the pork ribs are tender and the sauce has thickened, you can remove it from the heat.
