Ingredients
- 2 teaspoons black pepper
- A little salt
- 3 stalks lemongrass (cut into 4-inch pieces)
- 1 shallot (thinly sliced)
- 4 cloves garlic (thinly sliced)
- 5 tablespoons sugar
- 4 tablespoons fish sauce
- 2 tablespoons vegetable oil
- 680 grams (1.5 lb) pork chops
Step-by-step instructions
1. Put the black pepper into a mortar along with a little salt and pound it.
Add the lemongrass, shallot, garlic, and sugar, and pound until it becomes a paste.
2. Put the pounded paste of aromatics into a large bowl. Add the fish sauce and vegetable oil, and mix well.
Then add the pork chops and mix thoroughly. Put the marinated pork chops into a sealed bag and refrigerate for at least 30 minutes up to 3 hours.
3. Next, heat up the grill (or a grill pan) and brush it lightly with oil.
Grill the pork chops for about 5 minutes. Then flip to the other side and grill for another 5 minutes.
Once fully grilled, you'll have delicious Vietnamese-style grilled pork chops ready to enjoy.
