Ingredients
- 2 eggplants
- 1/2 tablespoon fish sauce
- 2 teaspoons lime juice
- 1 teaspoon sugar
- 1 teaspoon water
- 1/2 teaspoon finely minced garlic
- 1 fresh green chili (thinly sliced)
- 2 1/2 tablespoons oil
- 5 stalks spring onion (thinly sliced)
Step-by-step instructions
1. Preheat the grill pan. Poke holes in the eggplants using a toothpick or fork. Then grill them over the fire for about 15 to 20 minutes.
You'll need to turn the eggplants every 5 to 6 minutes.
2. While the eggplants are grilling, mix together the fish sauce, lime juice, sugar, water, garlic, and fresh green chili thoroughly.
3. To make the spring onion oil, heat a pan. Add the oil. Once the oil is hot, add the spring onions and fry until they soften.
4. Once the eggplants are grilled, place them on a chopping board and remove the skins.
You can cut the eggplant into bite-sized pieces, or leave it whole as it is.
5. Place the grilled eggplant onto a plate. Then pour the spring onion oil over it. If you like, you can sprinkle peanuts or sesame seeds on top.
