Ingredients
- 1 lb finely minced pork (ground pork)
- 3 tablespoons oil
- 2 teaspoons finely minced ginger
- 2 teaspoons thinly sliced garlic
- 1 fresh red chili, seeded and thinly sliced
- 1/2 cup finely minced shallots
- 2 tablespoons brown sugar (or more, to taste, for extra sweetness)
- 2 tablespoons Vietnamese fish sauce
- A little zest
- 1 lime (freshly squeezed)
- Spring onions (white and green parts, thinly sliced)
- Salt and black pepper (to taste)
Step-by-step Instructions
- Heat about 1 1/2 tablespoons of oil in a large pot. Add the pork and cook for about 1 minute. Add a little salt and black pepper, and cook for 4 minutes or until browned. Drain the pork in a colander to remove excess liquid and fat. Rinse and set aside.
- Heat about half a tablespoon of oil in a large pot. Add the spring onions and cook for about 1 minute, then add the ginger and chili and cook for another minute. Add the garlic and cook for about 15 seconds, stirring continuously.
- Return the browned pork to the pot and stir. Add the fish sauce and brown sugar. Stir and let it caramelize for about 1 minute. Stir a bit more and cook for another minute.
