For those who love salads, we're sharing a recipe for Thai-style chicken salad.
First, place a pot on the stove and add 3 tablespoons of rice, then stir. Add a lime leaf (or kaffir lime leaf) and stir. Once stirred, pound it in a mortar. This will give you the roasted rice powder.
Slice 150 grams of chicken thinly.
Add a little water into the pot, then add the thinly sliced chicken and fry it. There's no need to add any oil at all.
Once the chicken is cooked through, slice 1 shallot and add it in. Add 1 tablespoon of fish sauce and 1 teaspoon of it as well. Add 2 tablespoons of lime juice and mix well. Add 2 or 3 tablespoons of the roasted rice powder you pounded earlier.
Add a small amount of sliced spring onion as well. Also slice 4 leaves of Shan coriander (culantro) and add them in, then mix everything together. Once everything is well combined, you can scoop it into a plate.
Add whatever you like, such as cabbage or chili, into the plate along with the chicken salad. And there you have it — a delicious Thai-style chicken salad. Since the chili isn't mixed in all at once, even those who don't eat spicy food can enjoy it comfortably.
