- 10 tablespoons chicken stock
- 3 tablespoons oyster sauce and 1 tablespoon fish sauce
- 2 tablespoons brown sugar
- 1/2 teaspoon chili powder
- 2 teaspoons cornstarch
Step-by-step instructions
1. Mix the soy sauce and 1 teaspoon of brown sugar together thoroughly, then pour it over the beef. Mix well again.
2. Put the noodles into boiling water, and once cooked, rinse them in cold water.
3. In a bowl, combine the chicken stock, oyster sauce, fish sauce, 2 tablespoons of brown sugar, chili powder, and cornstarch, and mix thoroughly.
4. Heat a wok, then add 3 tablespoons of oil. Once the oil is hot, add the onion, garlic, ginger, and chili peppers, and stir-fry for about 2 minutes.
5. Next, add the beef and stir-fry for about 3 minutes. While the beef is cooking, gradually pour in about 3 tablespoons of the chicken stock sauce a little at a time, stirring constantly.
6. Then add the carrot and stir-fry for about 2 minutes.
7. Add the mushrooms, bell pepper, and broccoli, and stir-fry until all the vegetables are tender.
8. Finally, add the noodles and stir-fry. Pour in all the remaining chicken stock sauce and stir-fry for about 4 to 6 minutes.
9. After that, taste for saltiness and seasoning. If it's too bland, add fish sauce or soy sauce. If it's too salty, squeeze in a little lime juice. If you like it spicier, you can add a few more chili peppers.
