Ingredients
- 350 grams pork ribs
- 1 bowl of mushrooms
- 2 stalks lemongrass (thinly sliced)
- 3 slices galangal, thinly sliced
- 5 tomatoes
- 3 shallots (thinly sliced)
- 3 tablespoons fish sauce
- 3 tablespoons lime juice
- 1 stalk spring onion (thinly sliced)
- 5 kaffir lime leaves
- 15 dried whole chili peppers
- 4 tablespoons coriander leaves
- 3 cups water (48 tablespoons)
Step-by-Step Instructions
1. Add the thinly sliced shallots to a pot and stir-fry for about 5 minutes. Then add the tomatoes and heat for about 3 minutes. Next, add the chili peppers and stir for about 15 seconds.
Once done, transfer to a plate.
2. Next, pour 3 cups of water into a pot and bring it to a boil.
3. Once the water is boiling, lower the heat, add the pork ribs, and simmer on low heat for about 1 hour.
4. When the time is up, increase the heat slightly. Add the galangal, tomatoes, shallots, lemongrass, and mushrooms, and wait for it to come back to a boil.
5. Once it's boiling, add the kaffir lime leaves. Add the fish sauce, lime juice, spring onion, and coriander leaves, then let it simmer for about 1 minute.
Right before removing it from the stove, add the stir-fried chili peppers.
And there you have it - a delicious, spicy Thai-style pork rib soup!
