If you don't feel like eating a plain old noodle salad and want something health-conscious as well, try this Thai style noodle salad tossed with peanut sauce. The peanut sauce used here is blended with healthy vegetables.
Ingredients
- 6 oz dried noodles (brown rice noodles, Thai style rice noodles, soba noodles, linguini)
- 4 cups shredded red cabbage, carrots, and white radish
- 1 red bell pepper (thinly sliced)
- 3 spring onions (thinly sliced)
- 1/2 bunch chopped cilantro (or) mint leaves and chili flakes
- A few green Thai chilies (thinly sliced)
- 1/2 cup crushed peanuts
To make Thai Peanut Sauce

- A small amount of ginger (thinly sliced)
- 2 cloves garlic
- 1/2 cup peanut butter
- 1/2 cup orange juice (roughly 1 large orange)
- 1/3 cup lime juice (about 2 limes)
- 1/4 cup soy sauce or GF Braggs Liquid Amino Acids
- 1/3 cup honey or maple syrup
- 1/4 cup sesame oil
- 1 – 1 1/2 teaspoons cayenne pepper (or sriracha sauce powder)
- 1 teaspoon salt

Step-by-Step Instructions
Cook the noodles according to the instructions on the package. Once softened, rinse under cold water until clean and let cool.
While the noodles are cooking, blend all the ingredients for the peanut sauce in a blender until smooth.
Place the freshly cut vegetables, bell peppers, and spring onions in a large bowl. Add the cooled noodles to the bowl and mix well. Pour the peanut sauce over the top and toss to combine before serving.
