Hello everyone! This time, I'd like to share a recipe for a Thai-style chicken curry cooked with mango, where you can enjoy all four flavors — sweet, sour, salty, and spicy — together.

Ingredients

  • All-purpose flour or wheat flour - 128 grams
  • Salt - 1/2 teaspoon
  • Chicken breast - 3 pieces (cut into pieces about 2 inches long)
  • Oil - 4 tablespoons
  • Red bell pepper - 1

  • Ripe mango - half or one whole (cut into medium-sized pieces)
  • Coconut milk or water - 3 to 4 tablespoons
  • Coriander (cilantro) - a small amount

Ingredients needed for the mango sauce

  • Ripe mango - 2 (cut into medium-sized pieces)
  • Red chili - 1 (deseeded and thinly sliced)
  • Vinegar - 1 tablespoon
  • Soy sauce - 1 1/2 tablespoons
  • Fish sauce - 2 tablespoons

  • Lime - half (juice squeezed out)
  • Brown sugar - 1 tablespoon
  • Ginger - one thumb-sized piece
  • Garlic - 3 cloves
  • Turmeric powder - 1/4 teaspoon

Step-by-step instructions

1. First, to make the mango sauce, put the 2 ripe mangoes, red chili, vinegar, soy sauce, fish sauce, lime juice, brown sugar, ginger, garlic, and turmeric powder into a blender and blend until smooth.

2. Then, taste it. The purpose of making this sauce is to make sure the dish has all four flavors — sweet, sour, salty, and spicy. If the sauce isn't sour enough, add a bit more lime juice. If it isn't spicy enough, add a bit more chili. If it isn't salty enough, you can add more fish sauce.

3. Next, we'll cook the chicken. First, put the chicken into a bowl, then coat it evenly with the flour and salt.

4. Heat a pot and add the oil. Once the oil is hot, add the chicken pieces and fry for about 3 to 5 minutes until golden brown. Then transfer to a plate.

5. After cleaning the pot, add the mango sauce made earlier. Add the bell pepper. Bring to a boil over medium heat. Once it starts boiling, reduce the heat.

6. If the sauce becomes too thick, add coconut milk or water and simmer for about 3 minutes.

7. Next, add the fried chicken and stir well. Then add the mango (half or a whole one) and stir evenly.

After tasting for saltiness, you can add more fish sauce or chili if needed.

And there you have it — a Thai-style mango chicken curry with sweet, sour, salty, and spicy flavors that will delight your taste buds.
