Ingredients
- 5 oz tamarind pulp
- 32 tablespoons of warm water
- 1 thumb-sized piece of ginger (peeled and crushed)
- 5 tablespoons of water
- A little ice
- 2 teaspoons of peanuts
- 2 teaspoons of shredded coconut
Step-by-step instructions
1. Put the tamarind pulp into a small bowl and soak it with warm water. Wearing gloves, squeeze the tamarind pulp thoroughly to extract the juice.
2. Since we only want the liquid, strain the tamarind juice through a sieve. Put the strained, pure tamarind juice into a pot.
3. Heat the pot, then add the sugar and ginger, and simmer until it comes to a boil. Skim off any foam that rises to the top.
4. Pour the resulting tamarind juice into a glass bottle and let it cool.
5. Then, pour about 2 tablespoons of the tamarind juice into a glass. Add 5 tablespoons of water. Add ice water and mix thoroughly. Then add the peanuts and shredded coconut.
