Ingredients
- Pork belly 2.2 lbs
- Chicken stock (or vegetable stock) over 1 liter
- 2 thumb-sized pieces of ginger (peeled and thinly sliced)
- 3 cloves of garlic (peeled and thinly sliced)
- 1 tablespoon of Shaoxing wine and 1 tablespoon of sugar
- 2 tablespoons of vegetable oil
- A little salt and black pepper
- 1 red chili (thinly sliced)
- 3 tablespoons of light soy sauce, 2 tablespoons of honey, and 2 tablespoons of brown sugar
- 1 teaspoon of crushed Sichuan peppercorns until fragrant
Step-by-Step Method
1. Heat a pot and add the pork belly. Then add the chicken stock (or vegetable stock). Add about half of the thinly sliced ginger. Add the garlic, Shaoxing wine, and 1 tablespoon of sugar, then stir well to combine.
Then cover with a lid and simmer over low heat for about 2 hours.
2. In a small bowl, add 2 tablespoons of vegetable oil, salt and black pepper, about half of the thinly sliced ginger, the sliced chili, honey, brown sugar, light soy sauce, and Sichuan peppercorns, then mix well.
3. Once the 2 hours are up, remove the pork pieces and rinse them with water. The broth from boiling the pork can be kept for use as pork stock later.
4. Then, cut the pork into bite-sized pieces.
5. Heat a pot and add 1 tablespoon of oil. Once the oil is hot, add the pork belly pieces. Add salt and black pepper, and fry until the pork turns golden brown.
6. Then, pour the sauce made in step (2) over the pork. Once the sauce has soaked into the pork, fry until the pork turns dark brown.
Then remove from the stove and transfer to a serving plate.
And there you have it, a delicious Chinese-style fried pork belly dish. Sprinkle a little chopped spring onion on top before serving.
