Ingredients
- 0.5 lb prawns (peeled and washed thoroughly clean with water)
- 2 tablespoons and 4 teaspoons of vegetable oil
- 2.5 teaspoons fish sauce
- 1 packet dried rice vermicelli
- 2 cloves garlic (thinly sliced)
- 1 teaspoon soy sauce
- A little chili powder and sugar
- 2 eggs (beaten with a little salt)
- A little pork (thinly sliced)
- 1 onion (thinly sliced)
- Half a red chili pepper (seeds removed, thinly sliced)
- A handful of bean sprouts
- 1 teaspoon cooking wine
- 2 teaspoons salt and sesame oil, thinly sliced carrots, and 2 stalks of spring onion (thinly sliced)
Step-by-step preparation method
1. Marinate the prawns evenly with 1 teaspoon of oil and half a teaspoon of fish sauce.
2. Put the vermicelli in a bowl and soak in hot water for about 5 minutes.
3. Put the garlic in a bowl, then mix evenly with soy sauce, cooking wine, chili powder, sugar, and 2 teaspoons of fish sauce.
4. Heat a wok and add 1 teaspoon of oil. When the oil is hot, add the eggs and scramble them. Then transfer to a plate.
5. Next, add 2 teaspoons of oil to the wok. Add the prawns and heat for about 30 seconds. Then add the pork and onion and fry for another 30 seconds. Add the chili pepper and bean sprouts and stir-fry for about 30 seconds. Then add the carrots. Add salt and taste for seasoning.
Then add the scrambled eggs to the plate.
6. Again, add a little oil to the wok. Add the vermicelli and fry for about 30 seconds. Add the remaining fish sauce. Then add the earlier mixture of fried egg and other ingredients, and fry evenly.
Just before removing from the heat, add the sliced spring onions. Drizzle with sesame oil.
