Ingredients

  • 3 crabs (cut in half)
  • 100 grams cornstarch
  • 1 egg (beaten)
  • Half a pineapple (blended into a puree using a juicer/blender)
  • 6 cloves garlic (peeled)

  • 5 shallots (peeled)
  • 1 small piece of ginger (peeled)
  • 3 tablespoons chili powder
  • Cornstarch slurry (mix 2 tablespoons cornstarch with 4 tablespoons water until well combined)
  • 1 can tomato paste

  • 3 tablespoons chili sauce
  • 2 1/2 tablespoons sugar
  • 2 tablespoons vinegar
  • 20 tablespoons water
  • Salt and oil

Step-by-step instructions

1. Put the chili powder, garlic, shallots, and ginger into a mortar and pound into a paste.

2. Put the crabs into a large bowl and mix thoroughly with the cornstarch.

Heat a pot and add oil. Once the oil is hot, add the crabs and fry for about 5 to 8 minutes. Transfer the fried crabs to a plate.

3. Heat another pot. Add 3 tablespoons of oil, then add the pounded garlic and ginger mixture, and sauté for about 5 minutes until fragrant.

Next, add the chili sauce, sugar, vinegar, tomato paste, a pinch of salt, and the pineapple puree, and mix thoroughly. Then simmer over low heat for about 15 minutes until it comes to a boil.

4. Once it's boiling, add the beaten egg and stir well. Then add the cornstarch slurry and simmer until the sauce thickens.

5. Once the sauce has thickened, add the fried crabs and mix well. Then simmer for another 5 minutes until it comes to a boil again.

Once all these steps are complete, you will have a delicious dish of Singapore-style spicy crab.
