Ingredients
- 1 full bowl of rice
- 1/2 tablespoon cooking oil
- 1/2 tablespoon thinly sliced long beans
- 1/2 tablespoon shrimp paste
- 2 cloves garlic
- 1/2 tablespoon dried shrimp
- 2 fresh chilies
- 1 1/2 tablespoons lime juice
- 3/4 tablespoon fish sauce
- 3/4 tablespoon sugar
- 2 eggs
- 1/2 tablespoon soy sauce
- 1 small mackerel fish (or any fish of your preference)
Preparation steps
1. Pound the fresh chilies and garlic in a mortar. Then add 1/2 tablespoon shrimp paste, fish sauce, dried shrimp, sugar, and lime juice, and pound until well mashed.
2. Crack 2 eggs into a bowl, add 1/2 tablespoon soy sauce, and beat well until evenly mixed.
Then heat oil in a wok and fry the eggs.
3. Next, fry the mackerel fish. Once done, set it aside on a plate.
Heat the wok again and add 1/2 tablespoon of oil. Once the oil is hot, add the rice. Add the long beans. Stir-fry for about 2 minutes. Then add about 2 tablespoons of the pounded shrimp paste mixture made earlier, and stir-fry until well combined.
4. After tasting the fried rice for a light saltiness, add the fried egg made earlier and fold it over to one side. (Or you can shape it as you prefer.)
Then place the fried mackerel fish on the side.
And there you have it—a delicious shrimp paste fried rice!
