Ingredients
- 1 tomato (cut into medium-sized pieces)
- 1 onion (thinly sliced)
- 1 teaspoon oil and 1 teaspoon butter
- 400 grams pork (cut into medium-sized pieces)
- 4 tablespoons water
- 2 cherry tomatoes (cut into small square pieces)
- 2 cloves garlic (thinly sliced)
- 1 tablespoon vinegar (or lime juice)
- A pinch of salt
- A little coriander
Step-by-step instructions
1. Sprinkle a little salt on the tomato and let it sit for a few minutes.
2. Heat a pan and add 1 teaspoon of oil. Add the onion and a little salt, then fry for about 7 minutes. Then transfer to a bowl.
3. Then add a little more oil and butter, add the pork, and fry for about 4 minutes. (If the pan is small, you may need to fry it in two batches.)
Transfer the fried pork to a plate.
4. Then add 4 tablespoons of water into the pan. Scrape off any bits left from frying the pork, and pour the resulting liquid into the bowl with the onions.
5. Add about 1 teaspoon of oil and butter to the pan again. Add the tomato and mix well. Then cover and let it sit for about 3 minutes. Once the time is up, open the lid and stir-fry for about 2 to 3 more minutes.
6. Next, add the garlic, cherry tomatoes, the onions mixed with water, and vinegar, then mix well.
7. Then add the fried pork and stir-fry over medium heat for about 4 to 5 minutes.
Add salt and taste to check if it's mild or salty enough.
Just before taking it off the stove, sprinkle in the coriander.
