For those who love chicken rice, I'd like to share a simple recipe for cooking chicken rice at home.
Ingredients
- 4 pieces of chicken
- 1 tablespoon sesame oil
- 1 inch-diameter piece of ginger (thinly sliced)
- 3 cloves of garlic (finely chopped)
- 1 can of rice (measured with a milk tin, washed)
- 24 tablespoons chicken broth
- 1 tablespoon fish sauce
- 1 teaspoon cooking wine and 1 teaspoon sesame oil
- 1/4 teaspoon white pepper powder and 3/4 teaspoon salt
- 1/2 teaspoon each of garlic powder, onion powder, cumin powder, and chili powder
Step-by-step instructions
1. Rub the chicken pieces evenly with cooking wine and 1 tablespoon of sesame oil. Then rub evenly with white pepper powder, garlic powder, onion powder, cumin powder, chili powder, and salt, and let it marinate for about 20 minutes.
2. Heat a pot and add sesame oil. Add the ginger and garlic, and stir-fry in the oil for about 2-3 minutes.
3. Then add the rice and mix well. Once done, turn off the heat.
4. Clear a space in the rice to add the chicken pieces. Then add the chicken pieces. Pour in the chicken broth and fish sauce, then cover the pot with a lid.
5. Then let it cook for about 20 minutes until the chicken broth comes to a boil.
6. When the set time is up, check whether the chicken is tender or not.
Once both the chicken and rice are fully cooked, you'll have a delicious chicken rice ready to enjoy.
You can serve it deliciously with your favorite dipping sauce and boiled vegetables.
