Ingredients
- Salmon - 2 lbs
- Small potatoes - 1 lb
- Green beans (or long beans) - 1 lb
- Olive oil - 4 tablespoons
- Salt and black pepper - a little
- Lemon wedges for garnish
- Finely chopped cilantro - 2 tablespoons
- Garlic - 3 cloves (crushed)
- Dijon Mustard - 1 1/2 teaspoons (you can substitute vinegar)
- Lemon juice - 2 tablespoons
Step-by-step instructions
1. First, preheat the oven to 450°F.
2. Put the potatoes in a bowl and toss well with 1 tablespoon of olive oil, salt, and black pepper.
3. Then place the potatoes on a baking sheet and bake in the oven for about 12 minutes.
4. Also toss the green beans in the same potato bowl with 1 tablespoon of olive oil, salt, and black pepper until well coated.
5. In another small bowl, mix together cilantro, garlic, Dijon Mustard (or vinegar), 1/2 teaspoon of salt, a little black pepper, 2 tablespoons of olive oil, and lemon juice until well combined.
6. Once the 12 minutes are up, remove the potatoes from the oven. Place the salmon right in the middle of the baking sheet. Then pour the sauce you mixed earlier over the salmon. Arrange the green beans around the salmon.
7. Then bake the sheet in the oven for another 12 to 15 minutes.
Once the time is up, you'll have a delicious dish of roasted salmon with potatoes and green beans ready to enjoy.
