Ingredients
- 1 and a half bowls of biscuits
- 2 tablespoons brown sugar (melted into liquid)
- 5 tablespoons butter
- 8 oz cream cheese
- 8 tablespoons sour cream
- 2 eggs
- 8 tablespoons granulated sugar
- 2 teaspoons vanilla
- 1 teaspoon lemon juice
Steps to prepare
1. First, preheat the oven to 350 degrees Fahrenheit.
Line the small muffin cups you'll be baking the cake in with paper liners.
2. Put the biscuits into a food processor and grind them into crumbs. Alternatively, you can put the biscuits in a bag and crush them with a rolling pin.
Put the resulting biscuit crumbs into a bowl. Add the brown sugar and melted butter, then mix well until combined.
Take about 1 and a half tablespoons of the resulting biscuit mixture and place it into each small muffin cup.
3. Beat the cream cheese with an electric mixer for about 1 to 2 minutes. Then add the sour cream, eggs, sugar, vanilla, and lemon juice, and mix well again until combined.
4. Divide the resulting cream cheese mixture evenly among the small muffin cups. Then place them in the oven and bake for about 20 minutes.
Once the set time is up, remove from the oven and let cool. Then place in the refrigerator and let it chill for about 3 hours.
Once the set time is up, you'll have delicious mini cheesecakes ready to enjoy.
