During this mango season, you can make Mango Chutney at home. Since it's made with ripe mangoes or sour green mangoes, this sweet and tangy flavored Chutney can also be eaten as a side dish.

Ingredients
3 medium apples, peeled and sliced.
2 large mangoes, peeled and sliced.
1/2 red chili pepper, sliced.
Granulated sugar 1 1/2 cups (375 mL)
1 thinly sliced onion (250 mL)
Raisins 1/2 cup (125 mL)
White vinegar 1/2 cup (125 mL)
Peeled ginger 1/4 cup (50 mL)
Lemon juice 1 tablespoon (15 mL)
Curry powder 2 teaspoons (10 mL)
Ground nutmeg 1/2 teaspoon (2 mL)
Cinnamon powder 1/2 teaspoon (2 mL)
Salt 1/2 teaspoon (2 mL)

Put the apples, mangoes, red chili pepper, sugar, onion, raisins, vinegar and ginger into a stainless steel pot and cook. Once it comes to a boil, reduce the heat, cover, and simmer for about 20 minutes until the fruits become soft. Then add the lemon juice, curry powder, cinnamon, and salt, and simmer for another 5 minutes.

Once cooled, put it into a storage jar. When filling, don't fill it completely - leave about 1 1/2 inches of space at the top.
