Ingredients
- Flour 2 1/3 cups
- Baking Powder 3/4 tsp.
- Baking Soda 1/2 tsp.
- Ground Turmeric 1/4 tsp.
- Kosher Salt 1/2 tsp.
- Granulated Sugar 1 cup
- Lemon Zest 2 tbsp.
- Butter 1/2 cup
- Egg 1
- Egg yolk 1
- Lemon Juice 1/4 cup
- Vanilla Extract 1 1/2 tsp.
- Powdered Sugar 1 1/2 cups
Step-by-Step Instructions
In a large bowl, mix together the flour, baking powder, baking soda, ground turmeric, and salt until well combined, then set aside.
In the mixer bowl, combine 3/4 cup of the sugar with the lemon zest. Add the butter and beat on high speed for 3 to 4 minutes. Add the egg, egg yolk, lemon juice, and vanilla, then mix on medium-high speed until well combined, beating for an additional 30 seconds or so. Once combined, chill in the refrigerator for at least 1 hour or overnight.
Preheat the oven to 350°F. Place the powdered sugar and granulated sugar in two separate bowls. Line a baking sheet with parchment paper.
Scoop out a spoonful of dough and roll it into a ball. First roll the dough ball in the granulated sugar, then roll it again in the powdered sugar. Place the coated dough balls on the baking sheet, spacing them apart from each other.
Bake for 12 to 14 minutes, until the cookies have cracked and turned golden brown. Let the cookies cool on the baking sheet for about 2 minutes.
