Hello everyone! For those who want to enjoy a nice hot and spicy soup with rice, this time we'd like to share the recipe for a Korean dish called Spicy Pork and Tofu Kimchi Stew.
Ingredients
- 180 grams pork belly (cut into medium-sized chunks)
- 1 tablespoon cooking wine
- A pinch of ground black pepper
- 12 tablespoons kimchi
- 1 out of 4 shallots (thinly sliced)
- 1 stalk spring onion (thinly sliced)
- 2 shiitake mushrooms (stems removed and thinly sliced)
- 150 grams tofu (cut into fairly large square pieces)
- 16 tablespoons water
- 1 tablespoon chili powder, 1 teaspoon dried chili flakes, 1 tablespoon soybean sauce (fish sauce alternative), 1/4 teaspoon finely minced garlic, and a pinch of ground black pepper
Step-by-step preparation
1. Put the pork belly into a bowl and marinate it with cooking wine and ground black pepper, kneading well and letting it rest for about 15 minutes.
2. Put the kimchi into a hot pot and fry it until it becomes soft.
3. In a small bowl, combine the chili powder, dried chili flakes, soybean sauce, garlic, and ground black pepper, and mix well.
4. Put the marinated pork into a clay pot (or a regular pot if you don't have a clay pot). On top of the pork, add the kimchi, shallots, mushrooms, tofu, water, and the chili flake mixture prepared earlier, and pour it all in.
5. Then, place the pot over medium heat and bring it to a boil. After boiling for about 10 to 15 minutes, you will have a delicious spicy pork, tofu, and kimchi stew ready.
Now you can enjoy it deliciously together with rice.
