You can fry up Benihana fried rice, which could even be called the king of fried rice, in your own kitchen at home using simple ingredients. For the protein, you can use shrimp or chicken according to your preference.

Ingredients

  • 2 cups rice (or cooked white rice)
  • 3 cups water
  • 2 large carrots
  • 1 large onion
  • Spring onion
  • 4 eggs
  • 2 pounds protein (chicken breast or Jumbo shrimp)
  • 2 tablespoons Safflower Oil
  • Salt and black pepper
  • Sesame seeds
  • 1 stick butter (softened)
  • 2 cloves garlic (finely sliced)
  • 1 lemon
  • 2 teaspoons soy sauce

Step-by-step cooking instructions

Put the rice into a large bowl or pot with 3 cups of water. Add a little salt and stir. Turn the heat up high. Once the water boils, stir it. Cover the pot with a lid. Reduce the heat and let it simmer for another 20 minutes. Remove from heat and let it sit uncovered for another 20 minutes.

Spread the cooked rice onto a large baking tray and refrigerate overnight so that the moisture dries out. Don't skip this step, or the fried rice will turn out too soggy.

To make the garlic butter, mix butter with thinly sliced garlic, lemon juice, and a little soy sauce, and stir well.

Stir-fry the onion and carrots until they turn golden brown. Add the spring onion right before removing from heat. Set aside.

Heat a little oil and sear the chicken breast. After a while, add the garlic butter and stir until the chicken is fully coated, then set aside. Scramble the eggs.

In a large wok, add oil and the rice, stirring until well mixed. Add the garlic butter. Mix the rice thoroughly with the garlic butter. Add the vegetables, chicken, and eggs. Stir until well combined.

Season the fried rice with soy sauce, salt, and black pepper, then sprinkle sesame seeds on top.
