Ingredients
- 1 block of tofu (cut into triangular shapes)
- 16 tablespoons of vegetable oil
- 4 cloves of garlic (thinly sliced)
- 1 inch piece of ginger (cut into thin strips)
- 3 stalks of spring onion (cut into 1-inch lengths)
- 1/2 carrot (cut into thin strips)
- 1 bell pepper (thinly sliced)
- 1 teaspoon of sesame oil
- 1 bowl of mushrooms (thinly sliced)
- 1 tablespoon of chili paste
Ingredients needed for the sauce
- 3 tablespoons of light soy sauce
- 1 tablespoon of vinegar and 2 teaspoons of oyster sauce
- 1 tablespoon of sugar
- 3 tablespoons of water
- Cornstarch slurry (1 1/2 teaspoons of cornstarch and 1 tablespoon of water)
Step-by-step instructions
1. To make the sauce, mix together the soy sauce, vinegar, oyster sauce, sugar, and water thoroughly in a bowl.
2. Heat a wok and add oil. Add the tofu and fry each side for about 3 minutes. Once the tofu turns golden brown, transfer it to a plate.
3. Pour out the oil from the wok, leaving only about 1 tablespoon. Then add the onion, ginger, spring onion, and chili paste, and stir-fry for about 2 minutes.
4. Next, add the fried tofu, carrot, bell pepper, and mushrooms, and stir-fry together for about 30 seconds to a minute.
5. Then pour in the prepared sauce and stir-fry for about 5 minutes. Next, pour in the cornstarch slurry and cook until the sauce thickens.
After tasting for a mild, well-balanced flavor, you can take it off the stove and it's ready to serve.
