Ingredients

  • 1 whole chicken
  • A little salt
  • 8 table spoons of rice bran oil (peanut oil)
  • 2 shallots (peeled and cut in half)
  • 4 cloves garlic (crushed with a knife)

  • 1 inch-diameter piece of ginger (peeled)
  • 1 stalk lemongrass (crushed with a knife)
  • 6 whole peppercorns
  • 2 full bowls of rice (32 table spoons)

Step-by-step instructions

1. Rub the whole chicken with coarse salt about 3 times.

Then, put it into a large pot and add water until the chicken is fully submerged.

Add the peanut oil. Once it starts boiling, skim off the fat that rises to the surface with a spoon.

2. Then, add the shallots, garlic, ginger, lemongrass, peppercorns, and a little salt, cover with a lid, and let it simmer for about 45 minutes.

Once the time is up, turn off the heat. Leave the chicken in the pot for about 10 minutes.

3. After 10 minutes, put the whole boiled chicken into a large bowl, cover it with ice, and let it cool for about an hour.

4. Strain about 3 full bowls (48 table spoons) of the chicken broth through a sieve and let it cool.

5. In a large pot, add the rice and the chicken broth from earlier, and bring it to a boil.

Then cover with a lid and let it simmer for about 15 minutes.

Once the rice is cooked, remove it from the stove and let it steam for about 15 minutes.

After 15 minutes, fluff the rice with a spatula.

6. Once the whole chicken has cooled, debone it moderately and cut it into moderate-sized pieces.

Then arrange the rice and chicken pieces neatly on a plate. And there you have it — delicious chicken rice cooked in chicken fat is ready to enjoy.
