Ingredients

  • 1.5 lb potatoes
  • 3 slices dried bacon (cut into small squares)
  • 2 shallots (cut into small squares)
  • 2 tablespoons vinegar
  • 5 tablespoons vegetable broth (or chicken broth)

  • 1 tablespoon mayonnaise
  • A little salt and pepper
  • A little chopped herbs (coriander, parsley, or chives)

Step-by-step instructions

1. Put the potatoes into a pot, add water and a little salt, and boil for about 15 minutes.

Once the potatoes are tender, place them in cold water to cool down.

2. While the potatoes are cooling, fry the dried bacon.

Heat a pan and add a little oil. Then add the dried bacon and fry for about 5 minutes. (If you want it extra crispy, fry for about 8 minutes.)

3. Then add the shallots and stir-fry for another 5 minutes.

4. Then add the vinegar and fry for another 2 minutes. Add the broth, mayonnaise, salt, and pepper, and stir well until combined. Once done, you can turn off the heat.

5. Once the potatoes have cooled, peel off the skins and slice them into rounds.

6. Then add the potatoes into the pan with the bacon. Sprinkle in the herbs and mix well.

Taste to check whether it's too bland or too salty, and add a little more salt if needed.

Once everything is done, transfer it to a plate. Now you have a delicious German-style potato salad ready to enjoy.
