Ingredients
- 3 tablespoons of sesame paste or peanut butter
- 1½ tablespoons of sesame oil
- 3 tablespoons of vinegar
- 2 tablespoons of light soy sauce and 1½ tablespoons of dark soy sauce
- 1 teaspoon of Sichuan peppercorns, ¼ teaspoon of salt, and 3 teaspoons of chili oil
- 1 teaspoon of sugar
- 4 tablespoons of chicken broth
- 12 ounces of dried noodles
- 5 tablespoons of roasted, crushed peanuts
- 4 stalks of scallions (thinly sliced)
Step-by-step method
1. In a small bowl, mix the sesame paste or peanut butter, sesame oil, and vinegar together thoroughly.
Then add the light soy sauce, dark soy sauce, salt, Sichuan peppercorns, chili oil, sugar, and chicken broth, and mix well again.
2. Put the roasted peanuts into a mortar and pound them until crushed.
3. Boil the dried noodles in hot water until soft, then scoop them into a large bowl.
After that, pour the sauce prepared in step (1) over the noodles and mix well.
4. Then divide the noodles into individual serving bowls. Sprinkle with the crushed peanuts and scallions, and enjoy this delicious dish.
