Ingredients
- 1 catfish or any fish of your choice (cut into medium-sized pieces)
- 2 tablespoons of wheat flour
- Salt
- 2 stalks of spring onion (thinly sliced)
- 3 chilies (thinly sliced)
- 2 cloves of garlic (thinly sliced)
- A small amount of holy basil leaves or fresh basil leaves
- 3 kaffir lime seeds (peppercorns)
- 2 tablespoons of oyster sauce
- 1 1/2 tablespoons of fish sauce
Step-by-step instructions
1. Mix the medium-sized cut fish pieces with wheat flour and salt, kneading until evenly coated.
Heat the wok and add plenty of oil. Once the oil is hot, fry the fish pieces until they turn golden brown and crispy.
2. Next, add 3 tablespoons of oil to the wok. Once the oil is hot, add 2 cloves of garlic and fry until fragrant. Then add the fresh basil leaves or holy basil, fresh chilies, kaffir lime seeds, oyster sauce, and fish sauce, and stir for about 1 minute.
3. Next, add 1 to 2 tablespoons of water and let it simmer until the water reduces and dries up. Then add the fish you fried earlier and stir-fry until the fish and chilies are well combined.
Once everything is cooked through, you can take it off the stove.
