Ingredients
- 1 teaspoon turmeric powder, 2 teaspoons cumin powder, 1 teaspoon salt, and 1/4 teaspoon black pepper powder
- 1 lb chicken thigh (or chicken breast), cut into 1-inch cubes
- 3 tablespoons coconut oil
- 1 onion (cut into small square pieces)
- 3 cloves garlic (finely sliced)
- 1 tablespoon thinly sliced ginger
- 1 tablespoon finely pounded chili paste
- 1 red bell pepper (thinly sliced)
- 1 can coconut milk, 1 tablespoon honey, and half a lime (juiced)
- 1 tablespoon flour
Step-by-step instructions
1. Put the chicken pieces into a bowl and mix thoroughly with the turmeric powder, cumin powder, salt, and black pepper powder.
2. Heat a pot and add 2 tablespoons of coconut oil. Add the onion and sauté for about 3 minutes. Then add the ginger, garlic, and chili paste, and stir for about 2 minutes.
Add another tablespoon of coconut oil. Add the bell pepper and stir for about 2 minutes. Then add the chicken pieces and stir for about 5 minutes.
3. Once the chicken pieces have turned brown, add the coconut milk, lime juice, and honey, and simmer for about 3 to 5 minutes.
4. When the coconut milk sauce has thickened, scoop out about 2 tablespoons of the sauce into a bowl and mix thoroughly with the flour. Pour this flour mixture back into the pot, stir for another 2 to 3 minutes, and let it simmer.
Finally, you now have a delicious coconut milk chicken curry ready to enjoy.
