Ingredients
- 1 piece of tofu (cut into medium-sized pieces)
- 8 oz pork (finely minced)

- 1 preserved/salted egg
- 1/2 teaspoon sugar
- 2 teaspoons cooking wine
- 1/2 teaspoon salt
- 3 cloves garlic (finely minced)
- 3 teaspoons fish sauce
- 2 1/2 teaspoons cornstarch
- 3 tablespoons and 1 teaspoon vegetable oil
- 24 tablespoons chicken stock
- A little mustard greens and cabbage
- 2 bundles of vermicelli
Step-by-step instructions
1. Put the tofu pieces into a bowl and mash them with a fork.
2. In another bowl, combine the minced pork, mashed tofu, ginger, spring onion, preserved egg, sugar, cooking wine, salt, 2 teaspoons of the minced garlic, a little ground pepper, 2 teaspoons of fish sauce, and 1 teaspoon of cornstarch, then knead well until evenly mixed.
After that, refrigerate for about 30 minutes.
3. Once the time is up, shape the marinated pork mixture into medium-sized meatballs.
4. Heat a pan and add oil. Then add the pork meatballs and fry for about 3 minutes. Turn them over and fry for another 3 minutes.
5. In a large bowl, combine the chicken stock, ground pepper, 1 teaspoon of fish sauce, 1 1/2 teaspoons of cornstarch, and 1 teaspoon of minced garlic, then mix well.
6. Heat a large pot and add 1 teaspoon of oil. Add the mustard greens and cabbage. Add a little salt and stir-fry for about 3 minutes. Then add the fried pork meatballs. Pour in the chicken stock mixture prepared earlier and wait for it to come to a boil.
7. Meanwhile, soak the vermicelli in hot water for about 5 minutes.
8. Once the broth is boiling well, add the vermicelli and simmer for about 10 minutes.
