Ingredients
- 1 lb chicken (cut into 1-inch cubes)
- A pinch of salt and ground pepper
- 2 tablespoons olive oil
- 1 head broccoli (cut into medium pieces)
- Half red bell pepper and half yellow bell pepper each (cut into 1-inch cubes)
- 1 carrot (thinly sliced)
- 2 teaspoons thinly sliced ginger
- 2 cloves garlic (finely chopped)
Ingredients needed for the sauce
- 1 tablespoon cornstarch and 2 tablespoons cold water
- 4 tablespoons chicken broth and 3 tablespoons soy sauce
- 4 tablespoons honey
- 1 tablespoon sesame oil
- 1 teaspoon chili powder
Step-by-step method
1. In a bowl, combine the cornstarch and water and mix well until smooth. Then add the chicken broth, soy sauce, honey, sesame oil, and chili powder, and stir until well combined.
2. Heat a pan and add 1 tablespoon of olive oil. Once the oil is hot, add the chicken pieces. Then add salt and ground pepper, and stir-fry for about 3 to 5 minutes. Once cooked, transfer the fried chicken to a plate.
4. Lower the heat and pour in the remaining oil.
5. Then add the broccoli, bell peppers, and carrot, and stir-fry until all the vegetables are tender. Then add the ginger and garlic and stir-fry for about 1 minute.
6. Add back the fried chicken from earlier into the pan. Pour the sauce prepared in step (1) over the chicken and vegetable stir-fry.
7. Let it cook until the sauce comes to a boil and thickens. Once done, you can remove it from the heat.
And there you have it — a delicious plate of chicken and broccoli stir-fry!
