Ingredients
- About 30 sheets of wheat wrapper for wrapping the dumplings
- 1 viss (about 1.6 kg) of chicken (cut into small pieces)
- 1 shallot (thinly sliced)
- 4 cloves of garlic (thinly sliced)
- 1½ teaspoons of salt
- ½ teaspoon of ground pepper
- 4 tablespoons of cow's milk
- 1 tablespoon of corn flour
- 1 large cucumber (thinly sliced into strips like matchsticks)
- 1 tablespoon of sesame oil
Step-by-step Instructions
1. Put the cucumber strips into a large bowl, mix well with ½ teaspoon of salt, and let sit for about 5 to 10 minutes.
2. Put the chicken, shallot, garlic, 1 teaspoon of salt, ground pepper, cow's milk, and corn flour into a meat grinder and mix well for about one minute. Then transfer the meat into a large bowl.
3. Squeeze the cucumber strips until the liquid is drained out, then mix with the chicken. Add the sesame oil and mix thoroughly.
4. Then place about 1 tablespoon of the meat filling right in the center of the wheat wrapper. Wet the edges of the wrapper with water. Then fold and seal the edges carefully to shape it into a dumpling, rolling it up neatly.
5. Continue wrapping the dumplings until all the filling is used up. Place the finished dumplings into a bag and refrigerate them overnight.
6. When you're ready to steam the dumplings, pour water into a steaming pot and bring it to a rolling boil. Then line the steamer basket with oil-absorbing paper. Place the dumplings in and steam over high heat for about 10 minutes.
