Ingredients

  • Dried noodles, 4 oz (for two servings)
  • 1 piece chicken breast (boiled, then thinly sliced or shredded)
  • 1 chili pepper (thinly sliced)
  • 2 spring onions (thinly sliced) and a little coriander
  • 3 bowls of chicken broth (48 tablespoons) and 8 tablespoons of water

  • 2 tablespoons vegetable oil
  • 3 cloves garlic (crushed with the flat side of a knife) and a half-inch piece of ginger (thinly sliced and crushed with the flat side of a knife)
  • Half a teaspoon fish sauce (or soy sauce)
  • Half a teaspoon sesame oil and 1½ teaspoons chili oil
  • A pinch of salt

Step-by-step Instructions

1. Boil the dried noodles according to the instructions on the package for a few minutes, then divide them into the bowls you'll use to serve the noodle soup.

2. Heat a pot and add the vegetable oil. Once the oil is hot, add the garlic, ginger, and spring onion (white parts) and sauté until fragrant.

When the garlic turns golden brown, add the chicken broth, water, and fish sauce, then bring to a boil.

Once the broth comes to a boil, add the chicken and turn off the heat.

3. Next, remove the garlic, ginger, and spring onion from the broth. Taste the broth for seasoning, and if needed, add a little more salt.

Once everything is ready, pour the broth into the noodle bowls. Then place the chicken pieces on top of the noodles.

Drizzle the sesame oil and chili oil on top. Garnish with coriander, fresh chili, and spring onion (green parts).
