Bitter gourd is a healthy food. Using this bitter gourd along with eggs and dried shrimp, we'd like to share a Vietnamese-style recipe with food lovers on MyFood Myanmar.
Ingredients
- 2 bitter gourds
- 4 eggs
- 2 teaspoons fish sauce
- 1 teaspoon sugar
- 2 tablespoons vegetable oil
- 2 cloves garlic (thinly sliced)
- 4 tablespoons dried shrimp (soaked in water for about 30 minutes)
- 1 teaspoon thinly sliced shallots
- 1/4 teaspoon ground pepper
Step-by-step Instructions
1. Cut the bitter gourds in half lengthwise and remove the seeds. Then slice them thinly. After that, put them in water, add 1 teaspoon of salt, and soak for about 30 minutes. Once the time is up, rinse them again with water.
2. In a small bowl, beat the eggs together with the fish sauce and sugar until well mixed.
3. Heat a pan and add the vegetable oil. Once the oil is hot, add the garlic and dried shrimp and stir-fry for about 3 to 5 minutes.
4. Then add the bitter gourd and stir-fry for about 5 to 10 minutes.
5. Then pour in the beaten eggs. Stir-fry while the eggs are still slightly undercooked.
Just before taking it off the heat, sprinkle in the ground pepper and shallots.
And there you have it - a delicious Vietnamese-style bitter gourd and egg stir-fry dish.
