Ingredients
- Rice paper 200 grams
- Shrimp 500 grams (peeled and washed clean)
- Bean sprouts 210 grams
- Eggs 2
- Turmeric powder 1 teaspoon
- Spring onions 2 stalks (thinly sliced)
- Garlic 1 bulb (finely minced)
- Water 42 tablespoons
- Sugar 2 tablespoons
- Salt 1½ teaspoons and ground black pepper 1 teaspoon
Step-by-step preparation method
1. Crack the eggs into a large bowl, then add rice paper, turmeric powder, 32 tablespoons of water, half a teaspoon of salt, and spring onions. Mix well until evenly combined. Then let it soak for about 30 minutes.
2. Heat a pan and add a little oil. Then add the shrimp. Add 1 teaspoon of salt, 1 teaspoon of ground black pepper, and thinly sliced garlic, then stir-fry for about 3-4 minutes.
Once the shrimp are cooked, transfer them to a plate.
3. Heat another pan and add 1 tablespoon of oil. Then scoop about one large spoonful of the mixed egg mixture and pour it into the pan.
As soon as you add the egg, place about 3 tablespoons of shrimp on top of the egg immediately. Then add a handful of bean sprouts on top. Cover with a lid and let it sit for about 1 minute.
(Since you'll be folding the egg in half, leave one half of the egg empty and place the shrimp and bean sprouts only on the other half.)
4. After 1 minute, fold the egg in half and fry for another 1 minute.
Continue frying in this way until all the egg mixture is used up.
Once everything is fried, you'll have a delicious plate of bean sprout and shrimp egg rolls ready to enjoy.
