Ingredients
- 2 tablespoons olive oil

- 8 oz cauliflower (cut into medium-sized pieces)
- About 1 bowl of corn kernels
- 2 potatoes (peeled and cut into medium-sized chunks)
- 28 oz tomatoes (diced into small cubes)
- 15 oz chickpeas
- 1 bay leaf
- 2 tablespoons lemon juice
- 1.5 liters vegetable stock (or chicken stock)
- 2 teaspoons salt and 1 teaspoon black pepper
- 1 cucumber (thinly sliced into rounds)
Step-by-step instructions
1. Heat a soup pot and add the olive oil. Once the oil is hot, add the onion, carrot, and celery, and stir for about 5 minutes.
2. Next, add the garlic and stir for about 30 seconds until fragrant. Add the cauliflower, potatoes, corn, tomatoes, chickpeas, bay leaf, lemon juice, vegetable stock, salt, and black pepper, then mix everything together well.
3. Then, simmer over medium heat for about 20 minutes. Once the time is up, add the cucumber and stir for about 5 minutes. Taste for seasoning, and add more salt and black pepper if needed.
Just before taking it off the stove, you can remove the bay leaf.
