Ingredients
- 2 liters chicken stock
- 1 stalk lemongrass (thinly sliced)
- 1 carrot (thinly sliced)
- 4 cloves garlic (finely chopped)
- 3 tablespoons finely chopped shallots
- 2 tablespoons thinly sliced ginger, cut into strips
- 3 kaffir lime leaves
- 1.5 tablespoons fish sauce and 1/2 tablespoon soy sauce
- 1 teaspoon lime juice
- A small amount of shiitake mushrooms (stems removed)
- 1 cucumber (cut into half-moon shapes)
- 14 shrimp (peeled and cleaned)
- Cherry tomatoes (halved)
- About 1/4 can of coconut milk
- 1 teaspoon chili oil, a small amount of brown sugar, a small amount of chili powder (can be omitted)
Step-by-step method
1. Put the chicken stock into a pot and add the lemongrass. Simmer for about 5-6 minutes.
2. Next, add the carrot, garlic, shallots, ginger, kaffir lime leaves, fish sauce, soy sauce, and lime juice, then reduce the heat slightly. Cover and simmer for about 5 minutes.
Then add the mushrooms and cucumber and simmer for another 5 minutes.
3. Add the shrimp and cherry tomatoes and simmer for another 3 minutes.
4. Reduce the heat to the lowest setting, then add the coconut milk, chili oil, brown sugar, and chili powder, and taste to check the seasoning. If needed, you can add more fish sauce or chili oil. Then remove the kaffir lime leaves.
Once all these steps are complete, you'll have a delicious shrimp tom yum soup. Pour it into a serving bowl and enjoy it while it's flavorful.
