Ingredients

  • 1 bunch sweet potato leaves
  • 3 chili peppers
  • 6 cloves garlic
  • 1 tablespoon soybean paste
  • 1 tablespoon Shan-style rice wine (San Wine)

  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
  • 1/2 tablespoon sugar
  • 4 tablespoons cooking oil
  • A little water

Step-by-step instructions

1. Wash the sweet potato leaves thoroughly with water. Then separate the leaves from the stems.

Peel the garlic and pound it in a mortar until crushed. Add the chili peppers and pound them together. Then set aside separately.

2. In a bowl, mix together 1 tablespoon soybean paste, 1 tablespoon rice wine, 1 tablespoon oyster sauce, 1/2 tablespoon fish sauce, and 1/2 tablespoon sugar until well combined.

3. Then heat a wok and add 4 tablespoons of oil. Once the oil is hot, add the pounded garlic and chili, and fry until fragrant.

4. Then add the sweet potato stems first. Add the remaining 1/2 tablespoon of fish sauce and stir-fry for about 30 seconds.

5. Then add the sweet potato leaves and pour in the soybean paste mixture prepared in step (2), stirring until well combined.

6. After stir-frying for about 20 seconds, taste for a light salty flavor. Add a little more salt if needed.

Once everything is done, you'll have a delicious stir-fried sweet potato leaf dish ready to enjoy.
