Even for those who aren't fond of Thai food in general, this Thai farmer's soup is one of the best. It's tasty and not too difficult to make, so you can get a delicious bowl of soup in a short amount of time.

Ingredients

  • About 10 shrimp
  • 1 piece of pumpkin
  • 1 whole star fruit
  • 3 pieces of long beans
  • 1 piece of bottle gourd
  • About 5 baby corns
  • About 5 straw mushrooms
  • A handful of Vietnamese coriander (rau ram) leaves
  • 5 pieces of fresh green chili
  • 3 sprigs of basil leaves
  • A small amount of white peppercorns
  • 1 onion
  • 3 cloves of garlic

Method

First, clean the shrimp, peel off the shells and remove the heads, then marinate with a little salt and seasoning powder. Cut the pumpkin and bottle gourd into small pieces about 1 inch in size. Cut the long beans and baby corn into pieces about 1 inch long.

Slice the onion and fresh green chili thinly. Cut the straw mushrooms as appropriate. Combine the garlic and white peppercorns and pound coarsely. Pick the leaves off the rau ram and basil.

In the cooking pot, start boiling the shrimp with a little water. Once they are slightly cooked, set aside the shrimp heads and remove and strain the shrimp meat. Into the shrimp head broth, add the thinly sliced onion, the pounded garlic mixture, and the golden pumpkin, and start cooking.

Cover with a lid. (The heat should be reduced to the lowest setting.) Season with salt and seasoning powder (or chicken powder). When the golden pumpkin is nearly soft, add the long beans, baby corn, and bottle gourd.

When adding the straw mushrooms and star fruit, increase the heat again. Finally, add the shrimp that was set aside earlier, along with the rau ram and basil leaves, stir, squeeze in about half a lime, and serve before the vegetables change color.
