Ingredients
- 16 oz rice noodles
- 1 lb chicken breast (thinly sliced)
- 3 tablespoons vegetable oil
- 5 shiitake mushrooms (thinly sliced)
- 4 bowls of bok choy (cut into 2-inch lengths)
- 3 stalks scallions (cut into 2-inch lengths)
- 2 tablespoons each of light and dark soy sauce, 2 tablespoons oyster sauce, and 2 teaspoons brown sugar
- 3/4 teaspoon vinegar
- 3 cloves garlic (finely chopped)
Step-by-step instructions
1. If using dried rice noodles, soak them in the refrigerator with water for about 3 hours or overnight beforehand.
Then cut the rice noodles into medium-sized pieces.
2. In a small bowl, combine the light and dark soy sauce, oyster sauce, brown sugar, vinegar, and garlic, and mix well until the sugar dissolves.
3. Heat a wok and add oil. Once the oil is hot, add the chicken pieces and stir-fry for about 2 minutes.
4. Once the chicken is cooked through, add the mushrooms and scallions, and stir-fry for about 1 minute. Then add the rice noodles. Scoop out about 4 tablespoons of the mixed soy sauce mixture and add it to the pot, stirring for about 3 minutes.
5. Next, add the bok choy leaves. Pour in all the remaining soy sauce mixture and continue frying for another 2 to 3 minutes.
Once both the vegetables and the rice noodles have softened, add about 1 tablespoon of water and stir-fry until well combined.
After tasting and adjusting the seasoning to your liking, you'll have a delicious bowl of chicken rice noodle stir-fry ready to enjoy.
