  • Baking soda 1/8 teaspoon

Step-by-step method

1. Pour water into a pot and bring it to a boil. When it starts boiling, add the mustard greens and boil for about 10 seconds. As soon as they're done boiling, immediately soak them in ice water.

2. Once the vegetables have cooled, take out the leaves and squeeze out all the water. Then put them into a grinder and grind until smooth. After that, put them into a large bowl.

3. Slice the mushrooms finely. (Or) you can put them into a grinder and grind them.

4. Next, heat a pot and add 2 tablespoons of oil. When the oil is hot, add the finely sliced mushrooms and fry for about 3 to 4 minutes until fragrant. Once fried, add them into the bowl with the vegetables.

5. Also cut the dried tofu into thin slices, then add it into the vegetable bowl and mix well until evenly combined.

6. Next, add 1 tablespoon of oil, light soy sauce, sugar, sesame oil, ground pepper, and a little salt, then mix again until well combined. Once done, put it in the refrigerator. This will keep the vegetables fresh and crisp.

7. For the next step, you need to knead the dough. In a large bowl, mix warm water, yeast, and sugar until well combined. Let it rest for about 15 minutes, then add 1 tablespoon of oil and knead again. After that, set it aside for a while.

8. Meanwhile, mix the flour, corn starch, salt, and baking soda until well combined. Then combine this with the yeast dough from earlier and knead into one large dough ball. After that, brush 1 teaspoon of oil over it, cover with plastic wrap, and let it rest for about an hour.

9. Once the resting time is up, tear off a small portion from the large dough and roll it flat with a rolling pin.

10. Place about 2 tablespoons of the vegetable filling in the center of the flattened dough, then gather the edges of the dough up and pinch to seal at the top. After that, place it into a steamer and steam for about 20 minutes.
