Ingredients
- 1 table spoon of oil
- 2 stalks of lemongrass (cut in half)
- 1 inch-round piece of ginger (peeled and thinly sliced)
- 3 fresh green chilies (thinly sliced)
- 16 table spoons of pineapple
- 2 tomatoes
- 1 liter of water
- Half a corn cob (cut into about 2-inch pieces)
- 1 table spoon of sugar, 1½ teaspoons of salt, and 1 teaspoon of soy sauce
- 1 table spoon of tamarind pulp
Other ingredients
- 150 grams of your choice of dried noodles
- 3 bowls of mushrooms
- 1 piece of tofu (cut into medium-sized pieces)
- A handful of vegetables (such as morning glory, watercress, coriander, etc.)
Step-by-step instructions
1. Heat a large pot and add the oil. Once the oil is hot, add the lemongrass, ginger, garlic, and sliced green chilies, and sauté for about 5 minutes.
2. Then add the tomatoes and pineapple, and simmer for about 5 minutes until the tomatoes release their juice.
3. Next, add 1 liter of water into the pot. Add the corn, sugar, salt, and soy sauce, and simmer for about 20 minutes.
Then, in a small bowl, soak the tamarind pulp in 2 table spoons of warm water for about 5 minutes. After that, pour it into the soup pot.
4. Once all these steps are complete, taste the broth and adjust the seasoning to your preference — mild or salty.
Once the broth comes to a boil, you can add any other ingredients you like.
And there you have it — a delicious vegan hot pot!
