For those who love Korean food, this time I'd like to share a recipe for Grilled Chicken with Mixed Vegetables that's packed full of vegetables and easy to make.

Ingredients

  • 1 lb chicken (chicken breast or chicken thigh meat)
  • 3 tablespoons fish sauce
  • 10 cloves garlic (thinly sliced)
  • 1 tablespoon thinly sliced ginger
  • 4 tablespoons chili oil

  • 5 tablespoons chili powder
  • 8 tablespoons rice wine
  • 1/2 teaspoon ground black pepper
  • About 1 lb cabbage (thinly sliced)
  • 1 onion (thinly sliced)

  • 1 sweet potato (peeled and cut into bite-sized pieces)
  • 1 carrot (thinly sliced)
  • 2 long chili peppers (thinly sliced)
  • About 12 perilla leaves
  • Tteokbokki rice cake sticks (optional, can be omitted)

Step-by-step instructions

1. After cutting the chicken pieces into bite-sized chunks, put them into a bowl and mix well with 1 tablespoon fish sauce and ground black pepper.

2. In a bowl, mix garlic, ginger, chili oil, chili powder, 2 tablespoons fish sauce, and rice wine together thoroughly.

3. Next, arrange the cabbage in rows in a large pot. Add the onion, chili pepper, carrot, and sweet potato. (If using tteokbokki rice cakes, mix them in at the same time)

Place the perilla leaves on top of the vegetables. Put the chicken pieces right in the middle of the leaves. Pour the sauce over the chicken.

4. Then, cover the pot and heat for about 2-3 minutes. Once the time is up, stir with a spatula so that everything mixes together evenly.

5. Then, lower the heat to medium, cover the pot again, and let it cook for another 20 minutes or so. Stir frequently to prevent it from sticking to the pot.

6. Once the time is up, your delicious, spicy Grilled Chicken with Mixed Vegetables is ready to enjoy.
