Ingredients
- 1 whole chicken
- 2 tablespoons sliced ginger
- 8 stalks green onions (washed and cleaned)
- 12 oz bean sprouts (washed and cleaned)
- 12 cloves garlic (thinly sliced)
- 1 tablespoon fish sauce and a pinch of salt
- 4 tablespoons vegetable oil and 1 tablespoon sesame oil
- 3 oz onion (cut into small squares)
- 7 dried chili peppers and 5 tablespoons chili powder
- 1 teaspoon black pepper powder and 1 tablespoon salt
Step-by-step instructions
1. Rub the chicken pieces with 4 tablespoons of salt and rinse thoroughly with cold water until clean. Then place it into a large pot.
Cut the green onions into 4-inch lengths and add them into the pot with the chicken. Add the sliced ginger as well.
Then add about 14 cups (roughly 2.5+ liters) of water, cover with a lid, and let it simmer for about 1 hour until the chicken becomes tender.
2. Once the chicken is tender, transfer it into a bowl and let it cool.
Then remove the bones and shred the meat. Mix the shredded chicken evenly with 1 tablespoon fish sauce and 1 teaspoon salt.
3. Strain the chicken broth left in the pot through a clean cloth or a strainer. Then wash the pot thoroughly, pour the strained broth back into the pot, and bring it to a boil.
4. Heat a small pan and add the vegetable oil. Once the oil is hot, add the sliced onion and fry for about 8 minutes. Then add the dried chili peppers and fry for a few more minutes.
Strain the resulting oil into a small bowl, discarding the onion and chili peppers.
Then add the chili powder, sesame oil, black pepper powder, and 1 tablespoon of salt into the bowl of oil and mix thoroughly.
5. In a large bowl, add the bean sprouts and green onions. Then mix them evenly with the seasoned oil prepared earlier.
6. Then add the bean sprout mixture into the boiling chicken broth and let it simmer for about 20 minutes.
7. Then add the chicken and simmer for about 1 to 10 minutes.
And there you have it — a delicious Korean-style spicy bean sprout chicken soup, ready to be enjoyed.
