  • A handful of long beans (or winged beans)

  • A little bit of coriander leaves
  • A little bit of peanuts

Step-by-step preparation

1. Peel the papaya and shred it into thin strips using a grater.

2. In a blender, add the garlic, chilies, fish sauce, oil, lime juice, and brown sugar, then blend well. You should blend until the mixture turns reddish from the chilies.

3. You can pound the long beans in a mortar, or simply add them into the blender for a few seconds and blend briefly.

4. Combine the shredded papaya, tomatoes, long beans, spring onion, and coriander leaves in a large bowl, and mix well by pounding/tossing.

5. Pour in half of the peanuts and the sauce prepared earlier into the salad bowl, then toss well again. After that, add the remaining half of the peanuts and toss thoroughly once more.

6. After tasting for a balance of saltiness and sweetness, if it needs more saltiness, you can add a little more fish sauce (or soy sauce), and those who like it spicier can add extra chilies as desired.
