Ingredients
- 1.5 tablespoons vegetable oil
- 3 slices dried salted pork (cut into thin slices)
- 2 potatoes (peeled and cut into small cubes)
- 1.5 tablespoons fish sauce
- 3 eggs (beaten)
- 3 bowls of rice
- 1 bowl dried pork (cut into pieces the same size as the potatoes)
- Half a bowl of fresh green peas
- A little salt, 1 teaspoon cumin powder, and 1/4 teaspoon ground pepper
- 4 stalks spring onion (cut into thin slices)
Step-by-Step Instructions
1. Heat the pan and add half a tablespoon of oil. Add the dried salted pork and fry until crispy. Then transfer it to a bowl.
2. Add the potatoes to the pan and fry until they turn golden brown. Add half a tablespoon of fish sauce and stir-fry evenly.
If the potatoes are not yet cooked at this point, add 2 tablespoons of water, cover the pot, and let it steam for about 1 minute.
Put the resulting fried potatoes into the bowl with the dried salted pork.
3. Add 1 more tablespoon of oil to the pan. Add the eggs and scramble them. Then add the rice and stir-fry evenly. Add the green peas, dried pork, and spring onion. Add the cumin powder, ground pepper, and 1 tablespoon of fish sauce, then stir-fry for about 2 to 3 minutes.
4. Then add the potatoes and dried salted pork into the pan and mix them together with the rice.
After tasting to check the seasoning of salt, you can remove it from the stove.
Now you have a delicious Potato Fried Rice ready to enjoy.
