Ingredients

  • 1 lb chicken breast (thinly sliced)
  • 1 cucumber (halved and cut into fairly thick slices)
  • Half a red bell pepper (cut into 1-inch pieces)
  • 10 dried red chilies
  • 4 tablespoons peanuts

  • 2 stalks spring onion (thinly sliced)
  • 2 tablespoons vegetable oil
  • 1 tablespoon soy sauce, 1.5 tablespoons cooking wine, 2 teaspoons cornstarch, and half a teaspoon brown sugar

Sauce needed for the Kung Pao stir-fry

  • 3 tablespoons chicken stock (or water)
  • 1.5 tablespoons vinegar
  • 1 tablespoon dark soy sauce, 1 tablespoon oyster sauce, 1 tablespoon brown sugar, and 1 teaspoon cornstarch
  • 1 teaspoon sesame oil
  • 3 cloves finely minced garlic and finely minced ginger (about 2/4 teaspoon)

  • Half a teaspoon ground white pepper
  • A little chili powder

Step-by-step method

1. Put the thinly sliced chicken into a large bowl. Then mix well with the soy sauce, cooking wine, cornstarch, and brown sugar. Marinate in the refrigerator for about 30 minutes to overnight.

2. Next, prepare the sauce for the Kung Pao stir-fry. Put all the ingredients needed for the sauce into a bowl and mix well.

3. Heat a wok over high heat and add oil. When the oil is hot, add the chicken pieces and fry for about 1 minute. Then flip to the other side and fry until the chicken pieces turn golden brown.

Once done, transfer to a plate.

4. Next, add the cucumber, red bell pepper, dried red chilies, and peanuts into the wok and stir-fry for about 2-3 minutes. Then lower the heat and add the chicken pieces back in to stir-fry.

5. Next, pour in the Kung Pao sauce and cook for about 1-2 minutes until the sauce thickens. Just before removing from the heat, sprinkle in the spring onions.

And there you have it, a delicious Kung Pao Chicken dish!
