Hello everyone! For those who love fried rice, this time I'd like to share a recipe for Hawaiian style pineapple fried rice.
- Oil - 2 1/2 tablespoons
- Pineapple - about 2 cups (cut into small cubes)
- Rice - 4 cups
- Protein - about 6 ounces (chicken, shrimp, dried pork, or tofu - whichever you prefer)
- Eggs - 2 (beaten)
- Green peas - 1/2 cup
- Carrot, cut into small cubes - 1/2 cup
- Shallots, cut into small cubes - 1/2 cup
- Bell pepper, cut into small cubes - 1/2 cup
- Spring onions - 2 stalks (thinly sliced)
- Sesame seeds - 1 teaspoon
- Soy sauce - 2 tablespoons, oyster sauce - 2 tablespoons, sesame oil - 1 teaspoon, and thinly sliced garlic - 3 cloves
Step-by-step instructions
1. In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, and garlic until well combined.
2. Heat a wok/pan and add 1 teaspoon of oil. Then add the eggs and scramble them. Transfer the cooked eggs into a plate.
3. Add another 1 teaspoon of oil to the pan. Then add your protein of choice — dried pork, chicken, shrimp, or tofu — and stir-fry until cooked through.
Then transfer it onto a plate.
4. Add all the remaining oil into the pan. Then add the bell pepper, shallots, and carrots, and stir-fry for about 2 to 3 minutes.
5. Next, add the rice into the pan. Pour the soy sauce mixture over the rice and stir-fry until well combined. (You may add more oil if needed.)
6. Once everything is well combined, add the eggs, protein, and pineapple, and stir-fry for about 1 minute.
7. Then add the green peas and stir again until everything is well mixed. Taste and adjust for saltiness.
Once all these steps are complete, you'll have a delicious Hawaiian style pineapple fried rice.
If you'd like to make it look pretty, you can serve the fried rice inside a hollowed-out pineapple shell for a nice presentation.
