- 1 stalk of spring onion (cut into 1-inch lengths)
Step-by-step instructions
1. Wash the pumpkin thoroughly and peel off the skin. Remove the seeds and pulp, then cut into 2-inch cubes.
2. Put the pumpkin pieces into a pot filled with water and bring to a boil, letting it cook for about 20 minutes.
3. Soak the dried shiitake mushrooms in a bowl of cold water for about 20 minutes.
4. Once the time is up, squeeze the mushrooms to drain out the liquid.
5. Then, add the mushrooms, chicken stock, ginger, and dried pork ham into the pot with the pumpkin. Add salt and ground pepper, then taste and adjust for a mild saltiness.
6. After letting it cook for about 20 minutes, you can take it off the stove.
Once all these steps are complete, you'll have a delicious dried pork ham with pumpkin soup.
Just before serving with rice, sprinkle in the spring onions.
