Ingredients

  • 48 tablespoons of chicken broth
  • 2 cloves of garlic (crushed with the flat side of a knife)
  • 1 piece of ginger about half an inch in size (thinly sliced)
  • 1½ tablespoons of clear fish sauce
  • 2 teaspoons of sugar

  • 1½ tablespoons of cooking wine
  • ½ teaspoon of sesame oil
  • 180 grams of noodles
  • Mustard greens or any vegetable of your preference
  • 1 bowl of shredded boiled chicken

Step-by-step instructions

1. In a pot, add the chicken broth, garlic, ginger, fish sauce, sugar, cooking wine, and sesame oil, then heat over medium heat for about 8 to 10 minutes.

2. Cook the noodles according to the instructions on the package.

3. Cut the mustard greens into moderate-sized pieces. Then blanch the mustard greens in the noodle-cooking water or in the chicken broth for about 1 minute and take them out.

4. Remove the ginger and garlic from the chicken broth.

5. Place the cooked noodles into a bowl. Top with the boiled chicken and mustard greens. Then ladle the chicken broth over it.

If you'd like it spicy, you can add chili paste or chili peppers and enjoy it with a spicy kick.
