- Rice vinegar - 2 tablespoons
- Black vinegar - 1/2 to 1 1/2 tablespoons
- Dark soy sauce - 1 teaspoon
- Garlic - 1 clove (minced)
- Sugar - 3/4 teaspoon
- Ginger, thinly sliced - 1/2 teaspoon
- Sesame oil - 1/2 teaspoon
- White pepper powder - 1/8 teaspoon
Step-by-step preparation
1. Heat a large pot, then pour in the chicken broth (or vegetable broth) and bring it to a boil. Once boiling, add the mushrooms, bamboo shoots, and all the sauce ingredients, and wait for it to come back to a boil.
2. Once it's boiling, add the cornstarch slurry. Then bring it to a boil again.
3. Next, add the beaten eggs and stir gently to combine evenly.
4. Then add the tofu. After tasting for the right balance of light and salty flavor, you can add more soy sauce or vinegar if needed.
